RAFFINÉ Journal was not planned. It grew — the way the best things do — from a conversation that kept going. From a question that turned out to be bigger than anyone in the room expected. From the moment Sebastian Jakob — a two-Michelin-star chef in the Austrian Alps — and I looked at the same ingredient from opposite sides of a table and realised we were saying exactly the same thing.
That moment keeps happening. In mountain kitchens and university laboratories. In orchards at altitude and research clinics in city hospitals. The knowledge exists, in fragments, scattered across disciplines that rarely speak to each other. A chef who knows that his highland herb blend carries something extraordinary in its chemistry. A nutritionist who knows what that chemistry does in the body. A researcher who knows what happens to cancer cells when that compound arrives at sufficient concentration. None of them, until now, working in the same direction.
RAFFINÉ Journal exists because these conversations deserve a home.
Not a scientific journal — the science is already being written. Not a food magazine — the recipes are already being published. Something between them, and beyond both: a place where the intelligence of the kitchen and the precision of the laboratory meet on equal terms, written for people who are curious about both and unwilling to choose between pleasure and understanding.

Voices from the laboratory — scientists who have found in the culinary world a delivery mechanism that no supplement has been able to replicate. And voices from the field — the farmers, the mountain producers, the foragers who have known something for generations that the world is only now beginning to listen to.
